🥗 1. Egg & Avocado Power Salad

Calories: ~380 kcalProtein: ~18g

Ingredients:

  • 2 boiled eggs

  • ½ avocado (sliced)

  • 1 cup mixed greens (lettuce/spinach/rocket)

  • 5 cherry tomatoes (halved)

  • 1 tbsp pumpkin seeds

  • 1 tsp olive oil + lemon juice dressing

  • Salt, pepper, chili flakes

Instructions:Mix greens, avocado, and tomatoes. Top with sliced boiled eggs, seeds, and drizzle olive oil + lemon. Season and enjoy.


🥗 2. Grilled Tofu Rainbow Salad

Calories: ~360 kcalProtein: ~22g

Ingredients:

  • 100g firm tofu (grilled or air-fried)

  • 1 cup shredded cabbage

  • ½ cup grated carrots

  • ½ bell pepper (sliced)

  • 1 tsp sesame oil + soy sauce + lime dressing

  • 1 tsp sesame seeds

Instructions:Toss raw veggies together. Add grilled tofu on top. Drizzle with sesame-lime dressing and sprinkle sesame seeds.


🥗 3. Chickpea & Quinoa Mediterranean Salad

Calories: ~390 kcalProtein: ~15g

Ingredients:

  • ½ cup cooked quinoa

  • ½ cup boiled chickpeas

  • 1 small cucumber (chopped)

  • 5 cherry tomatoes

  • 1 tbsp crumbled feta or paneer

  • 1 tsp olive oil + oregano + lemon dressing

  • A few olives (optional)

Instructions:Mix quinoa, chickpeas, and chopped veggies. Top with paneer/feta and olives. Add dressing and toss well.


🥗 4. Indian Moong Sprout Chaat Salad

Calories: ~340 kcalProtein: ~18g

Ingredients:

  • ¾ cup moong sprouts (steamed or raw)

  • ¼ cup chopped onions

  • ¼ cup chopped tomatoes

  • 1 tbsp roasted peanuts

  • 1 boiled egg (optional topping)

  • Chaat masala, lemon juice, coriander

Instructions:Mix sprouts, onions, tomatoes, and peanuts. Season with chaat masala and lemon. Top with egg slices if desired.
