Summer salad

Mango 1 small

Watermelon about 200 g

Rice 30 g dry

quinoa 30 g dry

Seeds 20 g

1 tomato medium deseeded

100 g avocado

1 small yellow pepper

1 small red pepper

1 small onion

Salad leaves


Chop bell peppers and onions finely

Sauté them lightly in 5 gm oil so that they don’t smell if your salad is kept for sometime. Also helps in reducing strong flavour bell peppers.

Now assemble your leaves; add cooked vegetables

Add chopped avocado

Add quinoa

Rice; tomato

Chopped and de seeded watermelon; mango



Dressing

15 g olive oil

15 g vinegar

15 g honey

salt and pepper


Now drizzle the dressers g

Mix everything and toss seeds on top

Makes 3 portions

Add protein of choice (grilled tofu; shredded chicken or ricotta will go best)
